Roast Beef Rub
In a Molcajete
- Grind 1 tbsp coriander seeds
- Grind in 1 tbsp mustard seeds
- Add 2 tbsp black peppercorns, maintain coarse grind
- Add 2 tsp red pepper flakes, light grind, maintain texture
Mix in
- 1 tbsp kosher salt
- 2 tsp garlic powder
- 1/4 tsp allspice
Pat meat completely dry
Rub meat with olive oil
Press spice mixture firmly on all sides
Note
Sear on medium heat, to avoid burning the rub before roasting.
