- Mix dry ingredients
- 120g flour
- 50g granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- Mix wet ingredients
- 1 egg
- 1/4 cup milk
- 3 tbsp vegetable oil (sunflower if you can find it)
- 1 tsp vanilla extract
- Toss 100g berries or chopped fruit in 1 tbsp of dry ingredient mix to prevent sinking
- Fold dry ingredients into wet
- Gently mix in fruit
- Bake 18 minutes on 375° on middle rack or until toothpick comes out dry. Bake extra 4-5 minutes if frozen fruit.
- Rest in pan 5 minutes before removing

- 280g flour
- 100g light brown sugar
- 100g dark brown sugar
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- Mix wet ingredients
- 3 large eggs
- 3/4 cup vegetable oil (sunflower if you can find it)
- 1/4 cup milk
- 2 tsp vanilla extract
- Fold dry ingredients into wet
- Mix in
- 200g grated carrots
- 120g peeled + grated apple
- 40g shredded coconut
- 75g raisins
- Bake 20 minutes at 375° or until toothpick comes out clean
- Rest in pan for 5 minutes before removing
